debbe's improved german pancakes

4 eggs
2 ½ cups milk
1 Tablespoon sugar
1 cup flour
½ teaspoon salt
2-4 Tablespoons butter
2 lemons, cut into wedges; or lemon juice
Powdered sugar

1. Move oven rack to third level (one up from bottom position). Remove second rack to prevent pancakes from rising into it.
2. Preheat oven to 375F.
3. Place 1-2 Tablespoons of butter in each of two 9" microwavable pans (pie pans will do), and melt butter in microwave. Swirl butter around the pans and up the sides.
3. In medium bowl, beat eggs, then add milk, sugar, flour, and salt. Beat all.
4. Pour batter into pans, then microwave for 2 mins on medium power, stirring once.
5. Bake 20 mins on 3rd shelf. Broil 4-5 mins. Top with cinnamon. Serve with lemon and powdered sugar.
