veggie tacos

1/2 sweet onion
1 (1lb.) bag of carrots, trimmed
2 zucchini
2 (15 oz.) cans black beans, rinsed and drained
1 can Rotel diced tomatoes and green chiles
Whole wheat tortillas

1. Shred the onion in the food processor, and scrape into hot skillet to start sauteing.
2. Shred zucchini and add to onion. Shred carrots and add to veggies in pan. Stir often and cook for 10 - 30 minutes. Remove from heat when softened but still a little firm.
3. Add black beans and can of Rotel tomatoes.
4. Wrap in warm, whole tortilla.
