applesauce cake

2 cups applesauce
1 1/2 cups light brown sugar
1 cup canola oil
3 1/2 cups sifted flour (3 3/4 cups at high altitude, and I don't sift it)
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon powdered cloves
1/4 teaspoon ginger
raisins optional

1. Use cooking spray and flour to coat two 9-inch pie plates, or a 13x9x2-inch baking pan plus a few custard cups. Preheat oven to 350 degrees.
2. In a medium bowl, combine applesauce, brown sugar, and oil.
3. Combine cinnamon, cloves and ginger, then add them to already-combined remaining dry ingredients (flour, baking soda and salt) in a larger bowl. Combine all.
4. Pour batter into prepared baking pans. Bake 2 pie pans for about 40 minutes, or large baking pan for about an hour, or until toothpick comes out clean.

Serve with whipping cream or frost with a cream cheese frosting. I bet this also would be great to cut up and use in a trifle.
