KaseyBuick's salted caramel sauce


NOTE: the almost-empty jar of salted caramel sauce in the background is the *indicator* that it's time to make more of Kasey Buick's delectable caramel sauce. (there are additional indicators, like any holiday, hostess or teacher gift needs, shite...name your occasion; i told Kasey, i'm Pavlovian in my urges to make sauce each time i see her name on my FB feed.)
before we get to a few more pics, here is the recipe for you, who - like me! - don't care to endure all the yadayada before learning how to just dodat:
    **my version is double Kasey's**


1 3/4 cup heavy cream
1 vanilla bean, split lengthwise
1 cup sugar
1/4 cup light corn syrup
1/4 cup water
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2″ cubes
1/2 teaspoon kosher salt
    you'll need cheesecloth, or a fine strainer, too
1. Pour cream into a small pitcher or small bowl. 
2. Slice the vanilla bean lengthwise, and scrape the seeds from the vanilla bean into the cream. Stir a bit, then set aside.
3. Stir sugar, corn syrup, and 1/4 cup water in a heavy saucepan over medium heat until sugar dissolves. 
4. Increase heat to medium-high; boil, occasionally swirling pan, until deep amber color forms, 6-8 minutes.
5. Remove from heat; gradually whisk in vanilla cream. Continue whisking over medium heat until smooth and thick, about 15 minutes.  Don't be alarmed when the mixture gets scary (see pics below) stiff; keep whisking 'til it becomes uniform and thick.
6. Once there, remove from heat and whisk in butter and salt.
7. Pour through cheesecloth or a fine strainer into a heatproof bowl. Let cool slightly. Sample several spoonfuls. The recipe says so. 


The recipe above made ~2 3/4 cups, which fit into three and a half (6 oz. Ikea jars). I loved Kasey's presentation, and was moved to order similar twine and biodegradable spoons.
