dairy & egg-free chocolate cake



1 1/2 cups flour (plus 2 Tablespoons flour, if in high altitude)
1/3 cup unsweetened cocoa powder + two Tablespoons more!
1 teaspoon baking soda
1/2 tsp. salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 teaspoon vanilla
2 Tablespoons white vinegar

1. Preheat oven to 375 degrees.  Grease and flour a 9-inch x 13-inch cake pan.
2. Whisk together flour, cocoa powder, baking soda, salt, and sugar.  Set aside.
3. Combine oil, water, and vanilla in large bowl.
4. Add dry ingredients to the wet ingredients.  Stir to combine.
5. Add vinegar and quickly stir until combined.
6. Bake 25 to 30 minutes, or until toothpick inserted in the center comes out clean.

When I made this for Z's birthday party, he'd requested a tiered layer cake, so I doubled the recipe and made three cakes. I remember my mom baking with wax paper-lined cake pans, and hoped that technique would help here. It did! If you want an "easier-out," trace your cake pan base onto wax paper, cut the paper and place it inside the bottom of the pan. Then proceed with spray-oil and flour coating. Bake as directed. After pan has cooled, use a knife to loosen the edges of the cake and flip out onto plate. **Remove wax paper!** Voila. (add horrible green frosting to create a kid's bday cake, optional)
