1/2 cup unsalted almonds
1/2 cup golden raisins
1/4 cup crannies
2 Tablespoons finely chopped fresh chives OR
1 1/2 Tablespoons finely chopped spring onion
3 Tablespoons extra virgin olive oil
1/4 teaspoons kosher salt
1/4 teaspoons pepper
1 (15 oz.) container ricotta
1. Trim stem end off endives. Soak in water with lots of ice for at least an hour. Separate leaves. Spin dry and arrange on serving tray.
2. Roast almonds in oven til lightly browned. Chop roughly.
3. Combine all remaining ingredients (almonds through ricotta).
4. Top endive with mixture. Serve immediately.
