barbara's BBQ supper

Ingredients
Olive oil (spray, if you have it)
1-2 onions, sliced*
1 acorn squash, cut into large sections*
1-2 peppers, red and/or green, cut into large sections
1-2 zucchini, cut into large sections
½ bulb of fresh garlic, peeled and sliced in half
Salt and pepper, to taste
2-3 potatoes
2 teaspoons rosemary (or other fresh herb that you like) – or to taste
1 – 2 pounds tender, filet steak, such as sirloin or Chateaubriand
Dry mustard, to taste
Coarsely ground black pepper
Bread, to serve with the meal

1. Lightly spray heavy foil with oil. Place pieces of acorn squash in a single layer on the foil. Place onion rings on top of the squash. Wrap and put on grill for 15 minutes. Remove.
2. Add to squash and onions: pieces of red and/or green pepper, zucchini, fresh garlic, etc. Add a little salt and pepper and brush with olive oil and seal.
3. Bake potatoes in the microwave until almost done. Cut in half. Brush with olive oil and sprinkle with fresh herbs (e.g., rosemary).
4. Keep the piece of meat whole. Brush w/ oil and sprinkle on dry mustard and ground black pepper.
5. On the BBQ, place the halved potatoes, the steak, and the package of foiled vegetables. BBQ all until the meat reaches desired doneness, approximately 20 minutes (though the time depends on the thickness of the steak). At the last minute, you can also add bread to the grill, to warm.

Great during BBQ weather b/c the veggie chopping can be done in advance, then everything is cooked outside. Also, no dishes!
