jules' caramel corn

1/2 cup karo syrup
2 cup brown sugar
2 sticks butter or margarine
1 teaspoon baking soda
10 oz Puffcorn (Old Dutch and Frito Lay make a version of this)

1. Boil first three ingredients in a large pot (the contents will expland significantly when the baking soda is added). Add baking soda.
2. Place Puffcorn into two high-sided disposable turkey pans.* Pour sugar mixture over Puffcorn and stir.
3. Bake 1 hour at 200 degrees, stirring every 15 minutes.

*The high sides make for easier stirring. Though, when I "accidentally" spill some on the counter while stirring, I don't mind eating the spills. Cleanup is easy, as the caramel dissolves nicely in water. Keep the pans for next time, b/c there WILL be a next time.)
