~3 lbs bone-in chicken (4 split breasts, and 2 leg quarters worked well)
3 (10 1/2 oz.) cans cream-of soups (I use 1 chicken, 2 mushroom)
1 cup milk
1. In a small sauce pan, heat
soup, milk, rice and 3/4 of the wild rice' seasoning mix for ~5 mins. Pour into 9 x 13-inch pan, or even 11x14-inch pan.
2.
Nestle
pieces of chicken over rice mixture. The
chicken will be exposed. Sprinkle all
with remaining seasoning mix. Seal with foil.
3.
Bake
at 325ºF for 1 hour, but check after 45 minutes. Chicken should be 165-170 ºF internally to be done. May want to remove foil the last 10 minutes
to brown chicken.
This is an easy, kid-friendly dish.
