1 cup cottage cheese (1 1/2 c)
6 eggs (9 eggs)
1/2 cup flour (3/4 c)
1/4 teaspoon salt (1/4 t)
1/4 cup oil (1/4 c + 2T)
1/4 cup milk (1/4 c + 2T)
1/2 teaspoon vanilla (1 t)
1. Combine all ingredients in blender. Blend for 1 minute, stopping to stir if flour sticks on the side, or until mixture is creamy.
2. Pour by 1/3 cupfuls onto greased skillet. Makes 20 4-inch pancakes or about 6-inch Belgian waffles. Will you eat yours with peanut butter and syrup?
(in parentheses, I included 1.5 times the quantities, as we seem to not have enough with just one recipe, but the blender doesn't hold a double-batch.)
Also great for waffles. SUPER easy. My great-Aunt Barb used to serve these with blueberries cooked in, and they were the.most.delicious breakfast. This morning, I made them as waffles, and my two little ones ate almost the entire batch! We'll freeze the leftovers, but there aren't many.

This looks like a great high-protein breakfast. I'm going to try this right away. If it gets approval from Zach and Olivia, I'm hoping it will pass the Rylie inspection as well. :)
